CARROT CAKE

3 cups grated carrots
2 cups flour
2 cups granulated sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
4 eggs
1 1/2 cups vegatable oil
1 1/4 tsp vanilla
1 8oz.can crushed pineapple, with juice
3/4 cup pecans, chopped
1. Preheat oven to 350 deg. Grease and flour 9x13 pan.
2. In large bowl, combine carrots, flour, sugar, baking soda, baking powder, salt and cinnamon. Stir in eggs, oil, vanilla pineapple and pecans. Spoon into prepared pan.
3. Bake for 40-45 min. or until toothpick inserted in center of cake comes out clean. Allow to cool.
